When you’re famished, just way too hungry to cook something, what do you reach for? Cookies? Cheese & Crackers? Veggies? (Anyone that said veggies –  show-off!) My go-to famished meal starts with chips & salsa. Then, once my blood sugar is back to normal and it’s safe for me to operate a microwave again, I like a good old-fashioned frozen burrito. They are so quick and easy – a couple minutes in the microwave and it’s in my belly!

My favorite is Amy’s Black Bean Burrito, which is not only vegan, but also kosher, soy free, dairy free, lactose free, and tree nut free. They’re available in all my local grocery stores and they’re reasonably priced. I like to top mine with salsa and avocado and maybe some fresh cilantro.
