So my brother got married last week in a gorgeous beachside service. A friend of theirs is a fabulous cook who is also writing a cookbook. She made these incredible shortbread like bars that were so rich and delicious I thought I had gone to heaven! So I didn’t get the recipe…actually I don’t know if she would give it out since she is writing the book and all…but upon returning home I promptly looked on line to see if I could find a similar recipe. So the following recipe is the first try at copycatting this recipe. Sounds like it’s the same type of thing, so let’s see!
Tropical Coconut Bars, by Diana Rattray, About.com
Coconut Bars recipe with macadamia nuts have a tropical flavor with orange glaze and butter.
Cook Time:25 minutes
- 1/3 cup butter
- 2/3 cup light brown sugar, firmly packed
- 1 egg
- 1 cup sifted all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/3 cup milk
- 1/2 teaspoon vanilla
- 1 cup rolled oats
- 1/2 cup chopped macadamia nuts, pecans, walnuts, or other nuts
- 1/2 cup flaked coconut
- Orange Glaze, below
Cream butter and brown sugar; add egg and beat well. Combine flour, salt and soda; add to first mixture alternately with milk and vanilla, beating after each addition. Stir in oats, nuts, and coconut.
Bake at 350° in a greased 13x9x2-inch baking pan for about 20 to 25 minutes, or until browned lightly. While baking, prepare glaze.
- 1/3 cup sugar
- 3 tablespoons orange juice
- 1 tablespoon grated orange peel
Combine ingredients in a saucepan and boil until syrupy. Spread glaze on cookies while they are still hot. After coconut bars are glazed, cut in squares and remove to a rack.
